Because these classes are in high demand we run them as often as possible and we vary the course content and the times that we run them so that there is something to suit everyone who wants to come.

Three Week Indian

Indian food is full of complex spice combinations which make a huge impact on your taste buds. In this class chef will teach you, Spice combination and how to use them in some traditional southern Indian dishes. As this is a Hands On class you can follow chefs direction but also make the dishes to your own liking so if you prefer a milder curry then add a little less chilli or if you like it HOT! then all you need is to add more

WEEK 1: SPICE TASTING, RECOGNISING AND COMBINING OVER 50 SPICES, CREATING YOUR OWN SPICE BLENDS READY FOR WEEKS 2 & 3.

WEEK 2:  A SELECTION OF STARTERS, SIDE DISHES, RICE AND AUTHENTIC BREADS

WEEK 3: PREPARING 5-6 MAIN COURSE CURRIES USING LAMB, CHICKEN, PRAWNS & VEGETABLES ALL WITH DIFFERENT LEVELS OF HEAT FROM KORMA TO VINDALOO.


Spices of India

In this class chef will teach you a number of Spice combinations and how to use them in some traditional southern Indian dishes.

As this is a hands-on class you can follow chefs direction but also make the dishes to your own liking, adjusting the amount of chilli depending on whether you prefer a milder curry or something a little hotter!

In this class we will cover:

Ginger & Garlic purée

Taste, smell, discover from our spice tray, talking to you about the spices, how and when each combination works within the specific Curry
Make some "Quick" Breads, Chapatti & Puri Bread
During the class chef will taste your dishes advise you on the final adjusting to make each dish perfect!

CURRY CURRY CLASS

This popular class covers 3 Curries 3 Countries in ONE night!

There is a misconception about curry which is that it has to be HOT,  but a curry is so much more than just a single element. Curries vary with spice combinations, colours and taste.

The word Curry comes from southern India, 'KARHI' meaning 'sauce'.

When it comes to taste, spices provide an endless variety of possibilities and it’s some of these combinations that chef is going to walk you through.  The course not only looks at curries from India but also other cuisines including Thai, which is centred around coriander, ginger and coconut milk, and also the West Indies and Jamaica, where tomatoes and onions are the foundation for its curries with the Scotch Bonnet chilli providing the heat.

When making a curry the number one rule is - It should be a perfect blend and no one spice should dominate the dish.

About the class

This is a fast fun-packed class with so many ingredients to taste, we will show you the flavours from around the world, from Thailand, Jamaica and India.

Each Curry has its own authentic ingredients that we use from their respective countries, you will learn the best places to purchase your ingredients so when recreating what you have learnt it will taste great every time.

You don’t have to have an understanding of curries to attend this class just a love for them, the dishes you prepare will each be tasted by chef to ensure the balance of fine spices, herbs and seasoning are just right.
